The Sauvignon Blanc grape originated from France’s Bordeaux and Loire valley regions. These vines are heat tolerant and grow quickly, requiring consistent pruning for best results. This Fume Blanc originates from two of the oldest Beamsville Bench vineyards including the Kew estate vineyard and a fifty-year-old vineyard on Mountainview Road.
In Ontario, Fume Blanc must consist solely of the Sauvignon Blanc grape. Harvested midseason and aged in older French oak for eight months, lends a subtle toasted quality to the wine. We believe this wine demonstrates our winemaker’s artistic craftsmanship and showcases the depth of the character of the fruit.
This structured Fume Blanc pairs well with smoked fish, poultry, peppers and garlic. We like to enjoy this wine with pan-fried salmon with a light salsa verde, pasta with vegetables in a cream sauce, smoked trout and autumn soups. We believe that cheeses such as Camembert, Gouda, Gruyere, Parmesan best compliment this wine.
