Our 2013 Organic Riesling is our first offering that is a fully certified, Organic wine. Different farming and wine making practices, along with younger vines, gives this wine a vibrancy and freshness that isn't always seen in Niagara.
This dry style Riesling presents a fresh burst of citrus zest on the nose, complemented by a touch of peach. On the palate, fresh apple and hints of lemon are complemented by a bright, structured acidity. The finish is long, bright and cleansing.
This estate vintage pairs well with white fish, pork, and spicy food. While this wine would pair beautifully with Thai or Chinese foods, we also enjoy pairing this wine with lemongrass barbecued pork, fish tacos, braised rabbit with a mustard sauce or red snapper. Cheeses that pair well with this wine are Monterey Jack, Blue, and Smoked Gouda.
