This second vintage of our Barrel Aged Blanc de Blancs continues the tradition of fermentation and barrel aging our Chardonnay to produce an elegant and rich sparkling wine. Our 2014 vintage is fermented and aged in neutral French oak for one year to allow time for the oak character to blend perfectly with the fruit character of the chardonnay. After oak aging, this sparkling wine spent two years on lees, only adding to its round, rich texture.
As a result, this sparkling wine is golden in colour with notes of toast, caramel and baked apple on the nose. On the palate, a surprising acidity complements notes of toasted brioche and fresh apple characteristics, which develop into a warm buttery undertone. The finish remains long and clean. With a structure designed for aging – and with complexity that will develop as time passes – this wine will be enjoyed for many years to come.
Some great pairings to try with this vintage of Barrel Aged Blanc de Blancs are rich foods that hold up to this sparkling wine’s acidity. Try cream based dishes, fried chicken, or even gar-par chicken wings. This holds true with cheeses as well; enjoy with a creamy Brie or Camembert. If you’re looking for something more complex, try smoked cheddar to emphasize the vanilla and fruit character in the wine.
