Cabernet Franc is often called the “grape of Ontario.” It manages to thrive here and produces wines that are fully expressive of our unique – and often frustrating – terroir. Using only Cabernet Franc for this vintage, the wine was carefully crafted using the appassimento method, as well as extended neutral oak and bottle aging, resulting in a release five years after harvest.
The bright acidity that Ontario is known for remains present in this wine, while the tannins have softened and smoothed out. This wine’s initial aromas of jammy black cherry and rich, dried blackberry evolve into bolder notes of chocolate, leather and sweet spice. The tannins gather and develop as you enjoy this wine. Aging in French oak for two years, the finish to this wine remains elegant and silky smooth.
Spicy foods should be avoided when enjoying this wine, as its higher alcohol content will amplify the spice in your meal. The aromatic complexity of the 2014 Heritage allows for more interesting pairings than your average steak – think barbecue or veal parmesan. The alcohol content takes easily to heavier foods and rich cheeses like goat or feta, while braised meats are also wonderful matches
