The 2014 vintage was one where the terroir truly expressed itself. As a result, this vintage of our Pinot Noir in particular, builds successive layers of flavor, resulting in a light bodied, but complex wine.
This youthful wine first presents red fruit notes of cranberry, sour cherry and red plum. When given time to open up, the wine develops an herbal characteristic reminiscent of tobacco leaves. Aged in French Oak for 12 months, there is still a touch of clove or cardamom on the finish. The light but firm tannin grips the mouth without overwhelming, while the acid refreshes between sips.
The tannin in this wine reaches for a little more protein than might usually be found in a Pinot Noir. A pork roast, turkey, or cheeseburger would be a great option to allow the wine to play up its complexity while not overwhelming the flavour. When looking for a cheese pairings, choose cheeses with a touch more protein or cream. Examples may include Comte, aged Camembert, or English Cheddar with caramelized onions.
