In Ontario, Fume Blanc must consist solely of the Sauvignon Blanc grape. Harvested midseason and aged in older French oak, lends a subtle toasted quality to the wine, showcasing the depth and the character of the fruit.
WINEMAKER'S NOTES
Classic notes of gooseberry and citrus, along with a hint of grass and honeysuckle on the nose, soften to notes of ripe pineapple. With a fresh but soft mouthfeel, notes of pear, grilled pineapple and lemon follow through on the palate and are complemented by toasted pecan on the crisp and fresh finish.

This structured Fume Blanc pairs well with smoked fish, poultry, peppers and garlic. We like to enjoy this wine with pan-fried salmon with a light salsa verde, pasta with vegetables in a cream sauce, smoked trout and autumn soups. We believe that cheeses such as Camembert, Gouda, Gruyere, Parmesan best complement this wine.
