When discussing Champagne or Traditional Method sparkling wine, cuvée refers to the first pressings and best quality juice extracted from a varietal. Those first pressings leave us with an incredibly high quality wine that is exclusively used for sparkling wine.
Our 2016 Chardonnay Cuvée is produced solely from Chardonnay and was crafted for easy drinking, while still possessing the finesse and elegance of traditional method sparkling wine.
Pale straw in colour with an incredibly refined mousse, notes of lime, honey and a touch of biscuit dominate on the nose. From a fantastic vintage, the palate is lively and full of vibrant lemon and ripe tropical fruit characteristics. With five years on lees, the finish is rich, round and incredibly smooth.
Pair this Chardonnay sparkling with canapés, seafood - particularly oysters – or a fresh, green salad. As well, heavier foods such as risottos, mushrooms and heavy sauces, nicely complement this bubbly. That being said, our favourite pairing for this wine is a fried chicken sandwich. Cheeses that pair well with this sparkling are Manchego, aged cheddar, smoked gouda and a light goat cheese.
