This vintage of Tradition has less of a traditional blend than what we are used to seeing from our "Tradition" sparkling wine. Stepping away from using Pinot Noir, this vintage is almost equal parts Chardonnay and Pinot Meunier. With just over a year on lees, a bright fruit forwardness dominates. Blending these two varietals results in a gorgeous structure and depth to the wine, as well as an elegance and complexity that is unparalleled to any single varietal sparkling wine.
The resulting wine has abundant fruit character on the nose with ripe notes of citrus and apple. Warmer notes of pink peppercorn and lemon loaf are prominent. On the palate, flavours of fresh squeezed lemon and a touch of biscuit dominate, while gorgeous minerality on the back palate lend a touch of weight to a crisp finish.
This 2016 Tradition’s effervescence and fruit forwardness makes it excellent to pair with fried foods such as oysters and ceviche. For a more casual approach, pair this sparkling wine with popcorn or kettle chips. Avoid foods that are overly bitter, as the wine’s acidity will draw them out. Cheeses that would pair nicely include those richer creamier cheeses like Brie. But, for a truly outstanding pairing consider a French or Swiss mountain aged cheese, like Comte or Gruyere.
