Making a white wine from a red grape requires great care. Juice from gentle, whole berry pressing was fermented in stainless steel. On lees for almost three years, yeast contact in the bottle harmonized all of the elements together, resulting is a beautiful, copper coloured wine with a very fine mousse and lively effervescence.
On the nose, there is a beautiful balance between a rich biscuity characteristic and notes of bright red cherry. On the palate, a stunning effervescence complements hints of fresh strawberry, ripe red apple, and a touch of toasted almond. This sparkling wine is both complex and fresh while remaining remarkably smooth on the finish.
Our Blanc de Noirs pairs well with rich sauces, smoked fish and almonds. Some of our favourite dishes to compliment this sparkling are glazed beet salad, mushroom risotto, oysters and scrambled eggs with truffle oil. For the perfect cheese pairings we suggest Gruyere, Gouda, Swiss, Cheddar and Parmesan.
