This 2018 Rosalie is the fifth vintage of our well known “Rosalie” Rosé Sparkling Wine. Named in honour of our proprietor’s mother, Rosalie is a stunning example of how a Pinot Noir Rosé sparkling can be both refreshing and decadent.
Crafted exclusively from the Pinot Noir grape, the colour of a rosé sparkling wine poses a great challenge for winemakers. While some producers find comfort and consistency in using Pinot Noir reserve wine to achieve a rosé colour, our winemaker is adamant in relying solely on the Pinot Noir skins to achieve Rosalie’s light, pastel coral colour.
On the nose, ripe raspberry is complimented by a touch of rhubarb and zesty orange peel. On lees for two and a half years, there is a vibrant acidity on the palate helps express beautiful tart strawberry and white cherry notes. This finish remains crisp and dry with hints of grapefruit and peach.
Our favourite food pairings for this wine are smoked trout with chive crème fraiche, grilled salmon or shrimp, kale salad with a creamy lemon vinaigrette or sushi. For desserts, Rosalie pairs beautifully with fresh berries, strawberry cream tarts, old-fashioned style doughnuts. For cheeses, we highly recommend Manchego, Mozzarella and Gouda.
