In Ontario, Fume Blanc must consist solely of the Sauvignon Blanc grape. While Sauvignon Blanc can be a difficult varietal to grow in Ontario, our winemaker, Philip, is a big proponent of producing the varietal in this particular style as it allows for a richer, more complex palate without overwhelming the wine’s bright fruit characteristics.
WINEMAKER'S NOTES
On the nose, notes of lychee, gooseberry and grapefruit dominate. On the palate, notes of bright tropical fruit are complemented by a hint of vanilla creaminess. With five months aging in new French oak, notes of toasted almond and hazelnut bring a richness to the well-balanced finish.
FOOD MATCHES
This structured Fume Blanc pairs well with smoked fish, poultry, peppers and garlic. We like to enjoy this wine with pan-fried salmon with a light salsa verde, pasta with vegetables in a cream sauce, smoked trout and autumn soups. We believe that cheeses such as Camembert, Gouda, Gruyere, Parmesan best complement this wine.
